Cashew nuts are available year-round. They are sold "raw" and roasted, salted and unsalted, and in bulk or vacuum-sealed jars or cans.

How to Select & Store:
Cashews spoil quickly at room temperature and should be refrigerated. If refrigerated in a tightly sealed container, they will keep for six months or up to a year if frozen.

Preparation, uses, and tips
• Combining cashews with other nuts and dried fruits makes a healthy snack.
• Right before taking off the heat, add cashews to healthy sautéed vegetables.
• Healthy sauté cashews with shrimp, basil and green beans for a delightful Thai inspired dish.
• Cashews with a little bit of maple syrup make a great topping for hot cereals.
• Add cashew butter to breakfast soy or rice milk shakes to up their protein content (a quarter-cup of cashews provides 10.5% of the daily value for protein) and give them a creamy nutty taste.
• In a saucepan over low-medium heat, mix cashew butter with some tamari, cayenne pepper, garlic, ginger and water to make a wonderful sauce for fish, vegetables, tofu or rice.
• To roast cashews at home, do so gently--in a 160-170 degree F oven for 15-20 minutes--to preserve the healthy oils.

Health Benefits
Cashews are lower in fat than almonds, walnuts, peanuts and pecans. They provide protein, fiber, potassium, iron, and zinc. Cashews make delicious nut milk as a substitute for cow's milk. Simply put an appropriate amount of water in a blender and add as many cashews as may be desired to make the strength to you desire. Eaten in moderation, they are a useful addition to healthy diet.

Fun Facts
• The cashew tree is native to coastal areas of Brazil. In the 16th century, Portuguese explorers took cashew trees from this South American country and introduced them into other tropical regions such as India and some African countries, where they are now also cultivated. The cashew tree has always been a prized resource owing to its precious wood, cashew balm and cashew apple, but the cashew nut itself did not gain popularity until the beginning of the 20th century. Today, the leading commercial producers of cashews are India, Brazil, Mozambique, Tanzania and Nigeria

Cashews always always always get the better of me. I start out w/the best intentions. One handful, but 1 leads to 5, forget handfuls 2 thru 4, it's a blur. Cashews just taste so freaking good.

But I'm getting better. Now I single portion and baggy up my cashews. Then I leave the can @ home. This way when I'm done, I'm done. Well, after I lick the inside corners of the bag of course. After that I'm really done.

When I found that picture, I wanted to lick the screen, the back of my mouth started watering. Seriously.

I don't even bring cashews [or peanuts] into my house. I can handle almonds and walnuts, but those other nuts are gone in 60 seconds!
